I do the same thing with meat that fits in a crock pot and a lot of time... drop it in elevated on something so it's out of it's own juices, and let it cook for ~8 hours. Greatest damn pork roast I've ever had :)
Martha Stewart could show them a better way. Ted Turner could ship some dried bison chips to every major metropolitan area, which the pioneers used for cooking to good effect. It's more environmentally friendly than charcoal. Save a tree, will you!
